Recipe for classic Swedish summer cake
In the summer, Gudrun likes to spend as much time as possible at her house in the Stockholm archipelago. Life on the island is simple and so is Gudrun’s summer cake. It only takes 10 minutes to make.
- Buy (or make) a cake base.
- Spread the base with a layer of your favourite jam as well as a layer of vanilla cream.
- Cover the entire cake in whipped cream (both the top and sides).
- Top the cake with fresh strawberries or other berries of your choice, just pick whatever your garden or local market has to offer.
